Sweet potatoes are also known as yams. I don't think you can grow up Black in Georgia without having yams repeatedly. Most of us know candied yams -- sweet and maybe with a dollop of marshmallow on top. But that's not how I want you to fix them.
At the grocery store or market, buy 2 or more yams and at least 2 limes. They're tubular like. If they have any strands on them, pull of the strands. Rinse and poke a hole through. You'll probably neeed a knife (they're very thick) to poke a hole.
Wrap the yams in a paper towel and place in the microwave. I would microwave the two for six to eight minutes. To be sue that was enough time, poke a fork in the yam and if it goes through easily, it is done.
Place the yams on plates and cut down the middle to split yam into two halves. Sprinkle with sea salt and cut limes in half. Squeeze lime juice onto yams.
The yam has a rich texture, almost velvety and the sea salt and lime really make for an amazing taste.
